Cucumber, herb and sprout salad

Serves 4

 

The perfect salad for when it’s too hot to cook and you want something fresh and bright.

 

Ingredients

4 Lebanese cucumbers, roughly cut

100g pea sprouts/shoots

1 salad onion, thinly sliced

Handful of mint, parsley and dill, roughly chopped

60g roasted almonds

3 tbsp extra virgin olive oil

Juice of a lemon

Sea salt and black pepper

Method


1.

Place the cucumbers in a large bowl and tear in the sprouts. Add the onion, herbs and almonds.

2.

Dress with the olive oil and lemon juice and season to taste.
